Zu-Cake

Easy zucchini cake...made from a regular cake mix plus zucchini

It is the time of year you have an extra zucchini sitting on the counter and haven’t had time to do anything with it.

Here is an idea. Buy a chocolate cake mix (devil’s food also works). Mix it according to the package instructions except add a few shakes of ground cinnamon to the dry ingredients.

Then fold in 2 cups of peeled, seeded, grated zucchini.  (You peel the zucchini, cut it into fourths, scrape the seeds out with a spoon, and then grate the zucchini.)

Bake in a 9×13 pan according to the package instructions. Frost and enjoy.

(My husband loves to put his cake in a cereal bowl and cover it with milk.  He has converted a couple of my boys! Well, however you eat it, it is delicious.)

If you like to make homemade frosting, here is my mom’s recipe that I make all the time:

Chocolate Frosting

6 TBS margarine, softened

1 tsp vanilla

A splash of milk

2 ½ plus cups of powdered sugar

2 to 3 TBS cocoa

Mix together and add enough powdered sugar to get to the right consistency. Spread onto a cooled 9×13 cake.

    I wonder if Cody got that soggy cake thing from Ted Lee?? This cake sounds good and easy. And I know the frosting recipe by heart. Thanks Amy!!

      Recipe does not say how long to bake zu. Cake.

        Look at the length of time to bake it on the cake box. 🙂
