Eggs in Ham Cups is an easy breakfast for busy moms to make. They are a good source of protein and of multiple vitamins, and more importantly, the men in my house really like them! All you need is sliced ham, eggs, cheddar cheese, salt, and pepper. Make as many or as little as you like.
Eggs in Ham Cups
12 slices deli ham
6 slices cheddar cheese, quartered
12 eggs
Salt, pepper
Press one slice of ham onto the bottom and up the sides of each greased muffin cup, forming a shell. Arrange two, quarter cheese slice pieces in each shell. Break one egg into a small bowl and beat it. Put it into a muffin cup. Repeat for the remaining 11 eggs. Sprinkle salt and pepper over the top. Makes 12.
Bake, uncovered, at 350° for about 25 minutes or until eggs are completely set.
