Sausage Egg Roll Up is recipe that can served as a main dish at dinner or as a hearty breakfast.
1 lb sausage
7 large eggs
¾ cup salsa
Dough:
1 ¼ cups warm water
1 ½ tsp yeast
1 ½ tsp salt
1 ½ TBS sugar
3 TBS shortening
3 ¼ to 3 ½ cups flour
Brown sausage in a skillet. Remove the sausage to a separate bowl. Scramble the 7 eggs. Use some of the grease from the sausage to cook the eggs in. Cook the eggs. Return the sausage to the skillet with the eggs and dump in ¾ cup salsa. Toss to coat. Set aside and make the dough.
Put the warm water and yeast in a bowl. Let stand for a few minutes. (I like to use my KitchenAid Mixer with a dough hook.) Add the rest of the ingredients except slowly add the flour a cup at a time. Gradually mix in all the flour and knead. Let the dough rest for five minutes.
Preheat the oven to 425 degrees. Spray a jellyroll pan with nonstick spray. Roll the dough onto the pan. Spread the sausage eggs mixture over the top of the dough. Roll up cinnamon roll style. Seal seam by pinching slightly. Flip to place the loaf diagonal across the pan with the seam down. Tuck ends. Make a couple slits on top.
When the oven is at 425 degrees put the loaf in, then turn the oven down to 350 degrees and bake for 30 minutes. Serve topped with additional salsa.
