Are you wondering what else you can make with apples? Especially the ones past their prime? Try this method of preserving and a fun recipe.
I like to peel, core, and grate apples. I use them in a recipe or I freeze them in two cup increments to use later in the winter. I use the grated apples in my mom’s Raw Apple Bread/Muffins recipe (see recipe below). I like the Raw Apple recipe, because it has a high concentration of apples for the amount it makes…2 cups of grated apple spread throughout 14 muffins.

1 cup sugar
1 egg
¼ cup cooking oil
2 cups flour
1 tsp soda
½ tsp salt
½ tsp nutmeg
1 cup chopped nuts (opt)
2 cups grated raw peeled apple
Milk (If needed, it depends on how much moisture is in the apples you use….I usually put in about ¼ cup of milk)
Combine egg, oil, and sugar. Then add remaining ingredients. Add a little milk if the batter is too thick. Bake at 350 degrees. Makes one big loaf or three small loaves or 12 to 14 muffins. 55-60 min, 35-40 min, and 18-22 minutes respectively.
