I contacted a dear friend and asked her permission to share this recipe with you! We love these muffins. I can’t tell you how many times I have baked them over the years! Half of the oil is replaced with applesauce…so I pretend they are healthy.
Andrea’s Pumpkin Muffins
¾ cup canola oil
¾ cup applesauce
2 cups sugar
6 eggs beaten
3 ¾ c pumpkin (1 large can)
¾ tsp baking powder
3 tsp baking soda
2 tsp salt
1 tsp cloves (I don’t put those in )
1 tsp nutmeg
3 tsp cinnamon
5 cups flour ( I use a scant 2 cups whole wheat flour + 3 cups white flour)
2 cups milk chocolate chips
Preheat oven to 325 degrees. Mix together wet ingredients. Add the dry ingredients and mix. Place paper liners in the muffin tins (this makes about 48 muffins!). Bake for 25 minutes (or 15 minutes for mini muffins). These freeze really well for later use.
