Speedy Treats for Busy Days

speedy-treatsHere are a few ideas for speedy treats that don’t involve rushing to the store. (A small amount of prep time on a less busy day makes all the difference):

1) Freeze Cookie Dough Balls for quick cookies later- Mix up cookie dough. Spoon it onto a cookie sheet using a cookie scoop. They can be very close, but not touching. Place the cookie sheet in the freezer for a half hour. (This freezes the cookie dough just enough that they won’t stick together in the bag.) Be sure to set a timer so you don’t forget them.

Then remove each cookie dough ball and place them together in a plastic freezer bag. Put them back in the freezer for future use. frozen cookie dough ballsTo bake, put them out on a cookie sheet to thaw a little while you preheat the oven. Bake as usual…you may need to add about a minute to the baking time

2)  Premeasure 6 cups of rice crispies and freeze them in gallon bags to rapidly be able to make Rice Crispy Treats. To do this buy a big bag of rice crispies and split it up. bags of rice crispiesThis way as long as you have marshmallows you are ready to go. It takes less than five minutes to have the treats finished. I also like to replace ½ cup of the rice crispies with chocolate puff balls so there is some chocolate taste to the Rice Crispy Treats. I like the pre-measured bags in the freezer so the rice crispies don’t get eaten by kids searching the pantry!

Rice Crispy Treats

4 ½ cups mini marshmallows

3TBS margarine

Put marshmallows and margarine in a microwave safe bowl and heat for 1 ½ to 2 minutes.

Then add:

6 cups rice crispies (or 5 1/2 cups rice crispies with ½ cup cocoa puffs)

Stir and press into a buttered 9×13 pan.rice crispy treats

3)  Have cake mixes on hand for Cake Mix Cookies– The recipe is simple enough you can mix these up in minutes.

Cake Mix Cookies

1 cake mix

¼ cup flour

½ cup vegetable or canola oil

2 eggs

1 TBS water (optional—some brands of cake mix need a little extra moisture to stick together)

Mix and bake at 350 degrees for 8 to 10 minutes. Makes 22 to 24 cookies.

cake mix cookies4) Air Popper Popcorn or Microwave Popcorn–popcorn is a quick snack that kids love. Somehow it seems like you worked hard to pop it. 🙂
